Miyan geda or Groundnut soup can be served with any one of Nigeria's swallow (Eba, fufu, semo etc.) but in this case, it was served with tuwo shinkafa. How to Make Tuwo Shinkafa Tuwo Shinkafa is made out of rice, however, there is a unique kind of rice that does a perfect job. Tuwo shinkafa (rice fufu) is a Nigerian dish from the northern part of Nigeria prepared with rice.

It's usually made with a locally grown short grain rice popularly known as tuwo rice. This is the preferred choice because tuwo rice tends. Simmer until your bean soup has turned into a smooth paste and all ingredients are well blended into it; Add Seasoning to taste. How to make Miyan Taushe and Tuwo Shinkafa ( Details below) Miyan Taushe is a Pumpkin soup popular among the Hausas in Nigeria (Northern parts of Nigeria) A great blend of groundnut and pumpkin leaves spiced with pepper, Dawadawa (or Iru) & Knorr cubes.
Steps to make Tuwon Shinkafa (Mashed Rice) and Groundnut Soup (Miyan Gyada):
- For the tuwo/mashed rice: Place a pot of water on medium flame and bring to a boil. Wash the rice thoroughly making sure it's free from dirts. Add to the pot of boiling water and cook until soft and tender for easy mashing.
- The quantity of water needed depends on the quantity of rice and the nature of the rice (specie). it is recommended to use the one specifically for tuwo known as Shinkafar Tuwo in the Northern part of Nigeria
- Once the rice is tender. Allow the water to completely dry up before you mash using a wooden turn stick or spatula. Mould into desired shape and serve.
- For the Groundout Soup: Heat up a pot on medium flame, add palm oil. Allow for about 2 minutes, add diced onion and fry for about 3 minutes.
- Add the peppers/ pumpkin mix and fry until the oil appears at the top of the sauce. Make a slurry of the locusts beans in water if you are using the paste and add. If using the powdered one, you can add directly.
- Add the beef stock, ginger/garlic paste, seasoning cube and salt to taste.
- Cover and bring to a boil. Add the blended groundnut, stir and allow to cook for about 12 minutes. At this point you can adjust the thickness of the soup if it's too thick by adding a little water at a time until you achieve the desired consistency. Finally add the blanched vegetables (see my previous vegetable soup post to see how I blanch my vegetable) and the fried beef.
- Allow to simmer for just a minute and take off the heat.
It is enjoyed best with Tuwo Shinkafa. Rice Tuwo (Tuwo Shinkafa) is attributed to the northern part of Nigeria (well, we all eat it.lol) and it is a very basic rice food which is very popular I enjoyed eating Tuwo with Gbegiri Soup Recipe you can serve it with any of your favorites soup, it is one of my late dad's favorites (Rest easy, dad!). Tuwo Shinkafa is a substitute for Fufu and Eba, if you're watching your cholesterol or gluten intake. Miyan Taushe is usually served with Rice Masa or Tuwon Shinkafa. You can cook both side by side if you wish but I will recommend that you do one before the other, especially if you haven't cooked either of these before.
