Steps to make Baked Pumpkin Rice:
- Take a pumpkin and make a circle on top.Scrape the seeds and scrape the flesh too.Reserve the flesh.
- Make the Rub-Mix all.the ingredients mentioned under rub and mix well
- Apply this rub on the inside of the pumpkin.
- Preheat the oven to 200⁰ C and bake the Pumpkin for 20 mins or till it softens.
- Meanwhile prepare the rice
- Heat olive oil and add the sliced onions to it,once theonions turn transparent, add the garlic slices
- Add the scraped pumpkin flesh and adjust the salt and pepper.
- Add the dried cranberries too
- Now add the stock and let the rice cook till ¾
- Our Pumpkin should be ready by now
- Remove the pumpkin and add the prepared rice into it
- Fill completely and then add grated mozzarella cheese cover the pumpkin with the Pumpkin top that we had cut.
- Bake again in a preheat oven at 200⁰ c for 30 mins.
- Serve hot.This is a 1 pot dish and does not need any condiments.
