Spinach Dip:
- Get 2 lb Land O' Lakes hot pepper monterey jack deli cheese. Other cheese may curdle.
- Take 1 cup Half & Half
- Get 1/2 cup Frozen Chopped Spinach
- Get 1/2 cup Chopped Scallions
- Get 1 Chopped Tomato
- Get 1 packages tortilla chips

Spinach Dip:
- Peel and finely dice the scallions . Wash. core and dice the tomato.
- Place the spinach in a mesh strainer. Press or squeeze to remove the liquid.
- Shred or cut the cheese into smaller pieces to make melting easier.
- Using a double boiler, heat the Half & Half. Add the cheese and stir constantly as the cheese melts. When the cheese is completely melted, remove the mixture from the heat, Fold in the scallions , tomato and the spinach. Stir to combine. Alternatively this can be done with a microwave, melt the cheese then add the other ingredients.
- Serve warm with pita chips, crackers or tortilla chips.
